    I hate the phrase, "science says" or "science is telling us " Science doesn't say jack all. Scientists interpret data and evidence and scientists propose data-driven suggestions. They are not always right but we need to admit when scientists are wrong and not blame data. It's a cop out. This is not just quibbling over words either because we operate under some assumption that science is never wrong. A thorough review of scientific findings over the last several hundred years will show that scientists are frequently wrong.

    Thanks for the humility in the discussion, guys. I’m happy to listen to new data from scientific studies in order to preserve the long time health of deer populations generally provided that the wildlife agencies maintain are transparent with their reasoning and maintain humility with regard to the the existing evidence/body of knowledge. If COVID taught me anything, it’s how much less we know scientifically than we think we do. We have to make decisions with what information we have access to, but I’m certainly not going to stand for any Fauci-types declaring they are the science and who aren’t willing to have an open discussion about policy.

    We cann the majority of our Deer now. Everything except the backstraps. Mix with cream of mushroom soup and heat up in skillet. Heap on top of rice and make tacos with it or eat by itself. One of our favorite meals, super tasty and hearty and very fast.

    I canned some deer a few years back, like you said it didn't look all that great, but sure made it easy to cook a quick meal :) Perfect for those cuts that are full of connective tissues as it all breaks down during the canning process..

    Completely off topic but this was easy, read a report on Utah treating streams to help cutthroat trout with rotenone, how does that help native population if it kills them all?

      They will rotenone the creek above a natural or manmade structure that keeps downstream fish from moving upstream, and then they will re-introduce exclusively native fish in the upstream portion. The process has been used with great success for the expansion of Rio Grande Cutthroat in northern New Mexico and southern Colorado. I have fished multiple locations where this has been done and only encountered healthy populations of native fish. They are essentially giving the creek a fresh start.

    I’ve been canning wild game for a handful of years now. One of the best things I’ve learned how to do. Like you said, you forget to thaw something out and canned meat is just ready to go. It saves room in the freezer is another benefit. We also like it for camping. Then we don’t have to worry about keeping something frozen or thawing it in time to eat. We really enjoy adding beef stroganoff seasoning or brown gravy mix in the jar. Cook some egg noodles or rice and boom dinner is served. My brother in law in Alaska adds his favorite season salt and some potatoes and just eats it cold at work. So many ways to do it. It’s worth the investment of a pressure canner

    I'm curious to know if canned venison is a regional thing. At the beginning of the video, you said it sounded gross. Makes me wonder if canned venison is new to you. I live in Pa grew up in NY. Canned venison over egg noodles is a staple here in the north east.

      Super simple...jars, raw meat, a little salt or bullion, and a pressure canner. I did a bunch of venison (both deer & elk); great way to preserve it, saves freezer space, and no risk of losing frozen meat during a power outage.

    My wife does a lot of canning and we prepare some similar dishes. We usually find it best to drain the meat before adding to the pan.
